I love these two ingredient pancakes! Yes, you heard right, they contain only bananas and eggs which means they are gluten and dairy free. They are great as a tasty snack, healthy desert or a quick breakfast.

Peal the banana, break it up into chunks and put them in a bowl. Use a fork a mash it really well until there is no more bigger lumps.
Put two eggs into the bowl and mix them well with the banana puree. Stir in the cocoa powder as well if you are going for the choco version. You can also use a blender for all of this but you are going to miss a nice workout for your arms that way.
Heat a pan and add some butter or oil to it – i used coconut oil. When it’s hot enough put about 2 tablespoons of pancake batter into the pan. It should be hot enough that the batter sizzles immediately.
Cook them for a few minutes on each side until they look golden-brown on the bottom. Flip the pancakes slowly and gently because they are quite soft. The easiest way is to do it with a thin spatula.
