Most fitness lovers eat chicken almost every day and it gets soooo boring. That’s why I spiced it up a bit! I served it with zucchini and carrot “linguine” (noodles) which are very easy to make and the plate looks a bit more colorful.
There is a bit of honey in this recipe but the amount of carbs is still low, especially when paired with a veggie side dish as suggested.
Ingredients for chicken:
- 1 chicken breast
- 2 tbsp olive oil
- 1 tsp honey
- 1/2 tsp dried chili flakes
- 1/2 tsp sweet paprika
- 1/2 tsp garlic powder
Ingredients for linguine:
- 1 zucchini
- 2 carrots
Mix together all ingredients for the marinade – olive oil, honey, chili flakes, paprika, garlic powder, salt and pepper. Slice the chicken into thin strips and rub it well with the prepared marinade. Put it in the fridge and let it rest for at least half an hour so the flavors can absorb into meat and make it more tasty.
Meanwhile you can cut your zucchini and carrots into thin spaghetti-like strips or you can use a spiralizer if u have one.
Preheat a pan and put in the marinated chicken. You probably don’t have to add any additional oil, since the chicken is already coated in it. Cook it for a few minutes until golden brown.
Put the chicken to the side on a plate when it’s done, add a bit of oil to the pan if needed and toss your linguine in. Season them with a bit of salt and cook them for a few minutes while lightly stirring them. Linguine taste the best when they are still a bit crunchy so don’t overcook them.
